Vegan carrot oat muffins

Looking for super easy muffins, make in one bowl? Try out this 4 ingredients recipe without flour and sugar!

They are really healthy option, moist and fluffy.

And more than that : ready in couple of minutes.

Let’s jump straight into this delicious snack


• 1 + 1/2 Cup of oats

• 1 Banana

• 2 Medium carrots

• 1 Small spoon of honey

1. Put the oats in the blender and ground no it into the flour. It takes around one minute to get nice smooth texture. Then put half of the flour into the bowl and pour about half cap of hot water over it. Leave for couple of minutes to rest.

2. In the meantime, peel the carrot and ground. Same to the banana.

3. Mix all goodies together, add one spoon of honey. Leave it to rest for another 5 minutes so oats can absorb the moisture from carrot and get nice and soft. It is ready to go to your silicone muffins forms...

4. Put the tray into preheated oven and leave it around 45 minutes on 170’C.


Of course, if you like, you can add anything to make the muffins special. Using berries, coconut flakes, peanut putter, goji.... just experiment yourself.
